Sirniki Tvorog Pancakes Recipe
Who doesn’t like pancakes? Sirniki tvorog pancakes are the staple of Ukranian kitchens, but I’m certain they can be universally loved. Whether you’re hosting breakfast for a 5-year-old or a 95-year-old, my version of this popular dish will be a guaranteed hit at your table.
What you’ll need:
Cottage cheese
Sour cream, 2 tsp
Eggs, 1
Sugar, to taste (optional)
Vanilla, ¼ tsp (optional)
Flour, 1-2 tbsp, and keep some extra add later if needed
Baking Soda ¼ tsp
Oil for frying

Another reason to love this recipe? It’s simple! This recipe should yield about 2 to 3 servings. Combine all the ingredients (except that one additional flour) in a large bowl and mix together, breaking up the cheese with the fork so the texture is smooth and silky. Think buttermilk pancake batter, but with a twist.
Then, add extra flour if needed (if the mixture is not dry enough, another tablespoon) and mix well. The batter is going to thicken into a dough; start to shape the dough into rounded patties, and set aside. It might be easier to place them on a strip of parchment paper, or on a tray lightly dusted with flour so they don’t stick.
In a skillet, heat the oil (about 1 or 2 tbsp) until it’s hot. Then, plop in the sirniki patties and brown them up on both sides. That should take about 5 to 7 minutes for each side on medium low heat.
And that’s it! Super delicious with a wonderfully thick texture, and tinge of sweetness. Perfect for breakfast…and dinner…and anytime in between. I like to top mine with jam or sour cream, and enjoy with a cup of tea or coffee. Feel free to put your own spin on it, and add your choice of savory or sweet toppings. Or why not both?
